STAX, Hyatt Regency Mumbai's all new Italian restaurant, offers regional specialties served in a modern and relaxed ambiance.

A unique multi-level restaurant, STAX serves authentic Italian cuisine from the coastal provinces of Italy, including delicious fresh homemade pasta preparations, grilled meats, fresh sea food preparations and an extensive selection of vegetarian dishes - all prepared in a 'live' interactive kitchen.

Some of the signature dishes include Risotto mantecato agli asparagi con pomodori secchi e taleggio (Asparagus risotto with sun dried tomato and taleggio cheese, an Emilia Romagna special); Penne primavera (Penne in tomato sauce with seasonal vegetables); Spaghetti aglio olio, peperoncino e tonno (Spaghetti tossed with garlic, chilli and olive oil, tuna flakes and capers); Zuppa di pesce alla Siciliana (Classic Sicilian seafood soup); Stinco di agnello brasato alla Milanese con risotto allo zafferano (Lamb shank cooked Milanese style with saffron risotto) and Filetti di Branzino in Padella con Fonduta di Porri alla Siciliana (Fillet of Sea Bass with Leek Fondue and Sicilian Sauce). The STAX signature dessert Tiramisu (Traditionally Italian with mascarpone cheese and espresso flavoured) is a must have!

STAX follows the culinary principles of freshness of all seafood, meats and vegetables with simple cooking styles in order to retain the original flavors of the product.

The wine cellar and selection is predominantly of Italian origin including grappas, complementing the robust flavours and natural relation between the regions food and wine. The lounge bar located on the upper level, offers an exhaustive selection of malts and whiskeys.

Located at the lobby level of the hotel, adjacent to 'Glasshouse' the all-day dining restaurant, STAX overlooks the swimming pool and landscaped garden area of the hotel.

The restaurant is known for its interesting architectural uniqueness of combining elements of glass, steel and stone, making it a perfect destination for relaxed, comfortable and scrumptious meal.

Music plays an important part at STAX to uplift the spirits and create a perfect mood for fun and entertainment. Play lists include hits and popular upbeat retro and Italian numbers from the 60's and 70's.
